These may be more dessert than breakfast, but I’ve honestly had them mostly for a sweet breakfast! These Vegan Blackberry Blueberry Bars are perfect to satisfy that sweet tooth mid morning and mid afternoon and that energy kick to get you through the day. Not to mention all the goodness that comes from dark berries, antioxidants and whatnot. I’m not a nutritionalist, but there are definitely good qualities that come from eating berries and I’m all about berries!
If you live in the PNW, it’s still blueberry and blackberry season! Blackberries are in the thickets of ripening, and if you’re unsure what’s ripe (think plump and dark and big berries), I’ve got a little guide for you here! It’s nearing the end of blueberry u-pick season, but there’s a thing called huckleberries that are essentially the alpine version on blueberries that are in full swing right now. They look like smaller blueberries in the wild and any number of varieties out there are perfectly delicious. So why not go for a mountain hike and pick a few huckleberries, then come back to pick some local blackberries and make this much needed breakfast bar? And then take said bar on another hike! Anyway, this double berry bar! One of the biggest keys is toasting your oats for that extra crunch. Or else it’s just kind of sad and has no presence in the bar. Trust me on this! And then that beautiful layer of blackberries and blueberries, just mildly crushed to create a jammy inside. Pair it with a hint of cardamom and cinnamon, this bar will bring you right into that intersection of summer fading into a warm fall. So go on, try this berry berry bar!
Vegan Blackberry Blueberry Bar
Ingredients
- 3/4 cup toasted oats
- 3/4 cup all purpose flour
- 3/4 cup packed brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp cardamon
- 1/2 tsp salt
- 8 Tbsp vegan butter, softened
- 1/4 cup soy milk (or other milk alternative)
- 2 Tbsp sugar
- 1 tsp lemon juice
- 1 cup fresh blackberries
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 350ºF and line a 9x9 in square pan with parchment paper.
- In a medium bowl, mix the dry ingredients together (oats, flour, brown sugar, cinnamon, cardamom, salt).
- Then knead in the butter until the mixture becomes crumbly. Add 1 Tbsp of milk at a time until the mixture barely holds together. Err on side of dry.
- In another bowl, mix together the filling (berries, lemon juice, and white sugar). Mash them a little bit to release the juices.
- Spread out 1/2 of the oat-flour mixture onto the bottom of the pan and press it down. Then layer the berry mixture on top. And finally, loosely sprinkle the rest of the crumb mixture on top. It's okay if some of the berries are visible from the top.
- Bake for 40 min, until the topping become golden and filling is bubbly. Cool to room temperature before cutting. Enjoy!
